Zucchini-Mushroom Frittata

Ingredients

  • 14 c plus 18 c each green pepper and onion chopped
  • 34 c zucchini chopped
  • 34 c mushrooms chopped
  • 14 tsp garlic powder
  • 1 12 Tbsp oil
  • 3 eggs
  • 18 c light cream
  • 8 oz cream cheese cubed
  • 34 c Cheddar cheese shredded
  • 1 c soft bread cubes
  • 12 tsp salt
  • 18 tsp pepper

Directions

  1. Saute vegetables in oil until zucchini is crisp and tender Sprinkle in garlic powder
  2. Cool slightly
  3. Beat eggs with cream add cream cheese Cheddar cheese bread cubes salt pepper and sauteed vegetables
  4. Mix well
  5. Pour into well greased 9-inch glass deep dish pie plate
  6. Bake at 350 for 50 to 60 minutes or until set in center
  7. Cool for 10 minutes
