Zucchini-Mushroom Frittata
Ingredients
- 14 c plus 18 c each green pepper and onion chopped
- 34 c zucchini chopped
- 34 c mushrooms chopped
- 14 tsp garlic powder
- 1 12 Tbsp oil
- 3 eggs
- 18 c light cream
- 8 oz cream cheese cubed
- 34 c Cheddar cheese shredded
- 1 c soft bread cubes
- 12 tsp salt
- 18 tsp pepper
Directions
- Saute vegetables in oil until zucchini is crisp and tender Sprinkle in garlic powder
- Cool slightly
- Beat eggs with cream add cream cheese Cheddar cheese bread cubes salt pepper and sauteed vegetables
- Mix well
- Pour into well greased 9-inch glass deep dish pie plate
- Bake at 350 for 50 to 60 minutes or until set in center
- Cool for 10 minutes
