Zucchini-Potato Pancakes
Ingredients
- 3 Tbsp vegetable oil
- 2 large potatoes cooked and mashed
- 1 c saltine cracker crumbs
- 18 tsp black pepper
- grated Parmesan cheese
- 4 medium zucchini coarsely grated
- 3 eggs lightly beaten
- 1 tsp salt
- 12 tsp crushed basil optional
Directions
- Heat oil in large skillet
- In large bowl combine zucchini potatoes eggs cracker crumbs salt basil and pepper
- Stir until well mixed
- Drop by heaping tablespoonfuls into heated oil and cook until brown
- Add more oil if needed
- Serve with grated Parmesan cheese
- Makes about 18 medium pancakes
