Zucchini-Potato Pancakes

Ingredients

  • 3 Tbsp vegetable oil
  • 2 large potatoes cooked and mashed
  • 1 c saltine cracker crumbs
  • 18 tsp black pepper
  • grated Parmesan cheese
  • 4 medium zucchini coarsely grated
  • 3 eggs lightly beaten
  • 1 tsp salt
  • 12 tsp crushed basil optional

Directions

  1. Heat oil in large skillet
  2. In large bowl combine zucchini potatoes eggs cracker crumbs salt basil and pepper
  3. Stir until well mixed
  4. Drop by heaping tablespoonfuls into heated oil and cook until brown
  5. Add more oil if needed
  6. Serve with grated Parmesan cheese
  7. Makes about 18 medium pancakes
