Zucchini And Eggplant

Ingredients
- 2 zucchini sliced
- 1 small eggplant diced
- 2 onions sliced
- 6 oz thick tomato sauce
- 1 13 chicken or beef broth
- 1 tsp oregano or basil
Directions
- Combine the vegetables in a pot
- In a bowl stir the tomato sauce and broth together until smooth
- Stir in oregano or basil then add to mixture in pot and simmer covered for 30 to 40 minutes
