Zucchini And Rice Casserole
Ingredients
- 2 Tbsp olive oil
- 1 large onion chopped
- 2 lb zucchini chopped
- 1 tsp minced garlic
- salt and pepper to taste
- 12 c bread crumbs
- 2 eggs
- 34 c Swiss cheese grated
- 12 c parsley
- 2 c cooked short grain rice
- 12 tsp thyme
Directions
- Saute onion in oil
- Add zucchini garlic salt and pepper Cook 5 minutes until zucchini is bright green
- Beat eggs in a large bowl
- Add cheese parsley rice and thyme
- Add to zucchini mixture and place in a greased casserole
- Sprinkle with 12 cup bread crumbs and drizzle with olive oil
- Bake at 375 for 45 minutes
