Zucchini And Rice Casserole

Ingredients

  • 2 Tbsp olive oil
  • 1 large onion chopped
  • 2 lb zucchini chopped
  • 1 tsp minced garlic
  • salt and pepper to taste
  • 12 c bread crumbs
  • 2 eggs
  • 34 c Swiss cheese grated
  • 12 c parsley
  • 2 c cooked short grain rice
  • 12 tsp thyme

Directions

  1. Saute onion in oil
  2. Add zucchini garlic salt and pepper Cook 5 minutes until zucchini is bright green
  3. Beat eggs in a large bowl
  4. Add cheese parsley rice and thyme
  5. Add to zucchini mixture and place in a greased casserole
  6. Sprinkle with 12 cup bread crumbs and drizzle with olive oil
  7. Bake at 375 for 45 minutes
