Zucchini And Sausage Casserole

Ingredients

• 2 lb small zucchini
• 12 lb bulk sausage
• 14 c chopped onion
• 12 c flavored bread crumbs
• 2 eggs slightly beaten
• 14 tsp thyme
• 12 tsp salt
• 12 c Parmesan cheese grated

Directions

1. Wash and trim ends of zucchini dont peel
2. Drop into boiling water and cook for 4 minutes Drain and cut coarsely Brown sausage meat if using links remove from casing and onion Mix all ingredients together reserving 14 cup of the Parmesan cheese
3. Put into baking dish sprinkle with the remaining Parmesan cheese
4. Bake uncovered 40 to 45 minutes at 350 Serves 8 as a side dish or 4 if served over rice
