Zucchini And Squash Provincial
Ingredients
- 2 c zucchini sliced
- 1 medium onion sliced
- 3 Tbsp margarine
- 12 c Minute rice
- 2 c yellow squash sliced
- 2 16 oz stewed tomatoes strained slightly reserve juice
- 34 tsp garlic salt
- 12 tsp pepper
- 14 c reserved tomato juice
- 8 oz shredded Mozzarella cheese
- 2 Tbsp Parmesan cheese
Directions
- Preheat oven to 350
- Place the zucchini in the bottom of a 9 x 13-inch dish
- Top with onion
- Sprinkle uncooked rice over the onion
- Cut 1 tablespoon margarine into pieces and dot over casserole top with yellow squash
- Add tomatoes spices and juice Dot with 2 tablespoons margarine
- Cover tightly with foil and bake 50 minutes
- Remove from oven
- Remove foil and top with cheese Bake an additional 5 to 10 minutes until the cheese is melted
