Zucchini Carrot Cake

Ingredients

  • 2 eggs
  • 1 c sugar
  • 23 c oil
  • 1 14 c flour
  • 1 tsp baking powder
  • 1 tsp soda
  • 1 tsp cinnamon
  • 12 tsp salt
  • 1 c grated carrots
  • 1 c grated zucchini
  • 12 c chopped nuts
  • 12 c currants or raisins

Directions

  1. Beat eggs and sugar until frothy
  2. Gradually beat in oil add dry ingredients
  3. Beat at high speed 4 minutes
  4. Add carrots zucchini nuts and currants or raisins
  5. Pour in greased pan Bake at 350 for 35 minutes
