Zucchini Casserole Imperial

Ingredients

• 4 c sliced zucchini
• 2 c boiling water
• 2 eggs
• 1 c mayonnaise
• 1 medium onion chopped
• 12 c chopped green pepper
• 14 c chopped celery optional
• 1 c grated Parmesan cheese
• salt and pepper to taste
• 1 Tbsp butter or margarine
• 2 Tbsp buttered breadcrumbs optional

Directions

1. Cook zucchini until tender not mushy drain
2. In large bowl beat eggs stir in mayonnaise onion green pepper celery salt and pepper
3. Add zucchini
4. Turn into a greased 1 12-quart baking dish
5. Dot with butter and sprinkle with buttered breadcrumbs
