Zucchini Casserole Imperial
Ingredients
- 4 c sliced zucchini
- 2 c boiling water
- 2 eggs
- 1 c mayonnaise
- 1 medium onion chopped
- 12 c chopped green pepper
- 14 c chopped celery optional
- 1 c grated Parmesan cheese
- salt and pepper to taste
- 1 Tbsp butter or margarine
- 2 Tbsp buttered breadcrumbs optional
Directions
- Cook zucchini until tender not mushy drain
- In large bowl beat eggs stir in mayonnaise onion green pepper celery salt and pepper
- Add zucchini
- Turn into a greased 1 12-quart baking dish
- Dot with butter and sprinkle with buttered breadcrumbs
