Zucchini Cheese Casserole

Ingredients

  • 3 medium zucchini squash
  • 12 c chopped onion
  • 2 fresh tomatoes sliced
  • 2 Tbsp oil
  • 1 lb low-fat cottage cheese
  • 1 tsp basil
  • 12 tsp oregano
  • 13 c Parmesan cheese

Directions

  1. Saute zucchini and chopped onion in oil
  2. Whip cottage cheese with basil and oregano in blender Place alternating layers of zucchini cottage cheese and tomatoes in a 1 12-quart casserole dish
  3. Top with Parmesan cheese
  4. Bake at 350 uncovered for 25 to 30 minutes
