Zucchini Cookies

Ingredients
- 1 c shortening room temperature
- 1 c granulated sugar
- 1 c packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 to 2 c shredded zucchini uncooked
- 1 c chopped nuts optional
- 1 box raisins
- 3 12 c flour sifted
- 1 tsp baking powder
Directions
- Cream shortening and sugar until light
- Stir in and beat eggs and vanilla until fluffy
- Stir in zucchini and raisins
- Mix flour and baking soda
- Stir into batter
- Drop by teaspoon onto ungreased cookie sheet and bake until golden brown at 350 10 to 12 minutes
- If they are small bake at 375
