Zucchini Cornbread

Ingredients

  • 6 eggs
  • 12 c sugar optional
  • 3 sticks margarine melted
  • 2 12 c self-rising cornmeal
  • 12 c flour
  • 1 12 c cottage cheese
  • 3 c shredded unpeeled zucchini

Directions

  1. Mix all ingredients together
  2. Pour into a greased 9 x 13-inch or 10 x 15-inch pan
  3. Bake at 400 for 30 to 40 minutes
