Zucchini Honey Bread

Ingredients
- 3 c all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 Tbsp ground cinnamon
- 1 c chopped pecans or walnuts
- 2 large zucchini
- 2 eggs slightly beaten or Egg Beaters
- 1 12 c sugar
- 34 c honey
- 1 c vegetable oil
- 1 tsp vanilla extract
Directions
- Combine first 5 ingredients
- Stir in nuts
- Peel zucchini and shred enough for 2 cups
- Combine zucchini and remaining ingredients Add to flour mixture stirring until dry ingredients are moistened
- Spoon batter into 2 greased loaf pans Bake at 350 for 1 hour and 5 minutes or until done by testing with a toothpick
- Cool in pans for 10 minutes
- Turn out of pans and cool
