Zucchini Hot Dish

Ingredients

• 6 c zucchini cut up
• 1 onion chopped
• 1 pkg herb stuffing mix
• 1 c grated carrots
• 2 cans soup mushroom celery or onion soup
• 12 c butter melted
• 1 c sour cream

Directions

1. Cook zucchini and onion in water for 5 to 10 minutes
2. Drain Place 12 package herb stuffing in bottom of greased 12 x 9-inch baking pan Cover with zucchini and onion mixture Combine grated carrots soup mixes and melted butter
3. Spread over top Cover with sour cream
4. Sprinkle remaining stuffing on top Bake at 350 for 40 minutes
