Zucchini Lasagne

Ingredients

  • 6 c sliced zucchini
  • 12 lb ground beef
  • 1 clove garlic chopped
  • 1 8 oz can tomato sauce
  • 1 tsp salt
  • 12 tsp oregano
  • 12 tsp basil
  • 1 c Ricotta cheese
  • 1 egg beaten
  • 1 tsp parsley
  • 14 c bread crumbs
  • 1 c Mozzarella shredded

Directions

  1. Cook zucchini in boiling salt water for 5 minutes
  2. Cook beef and garlic stir in spices and sauce
  3. Mix Ricotta egg and parsley
  4. Place 12 zucchini in greased 8-inch square baking pan Sprinkle with bread crumbs
  5. Spread 12 of Ricotta 12 of beef mixture and 12 of Mozzarella
  6. Repeat
  7. Bake at 350 for 25 to 30 minutes
  8. Yields 5 to 6 servings
