Zucchini MadeleinesA Quickie Appetizer

Ingredients
- 1 lb zucchini shredded
- 2 tsp salt
- 6 Tbsp olive oil
- 1 medium size onion chopped
- 5 eggs
- 2 Tbsp milk
- 1 12 c grated Parmesan cheese
- 1 clove garlic minced
- 1 c all-purpose flour
- 14 tsp ground pepper
- 1 Tbsp baking powder
- 2 Tbsp fresh basil chopped or 1 tsp dried basil
Directions
- In a colander mix zucchini with salt
- Let stand until zucchini is limp and liquid has drained
- Rinse and drain zucchini well squeezing out as much water as possible
- While zucchini is draining heat 2 tablespoons of oil in a wide frying pan over medium heat
- Add onion stir often until soft
- Remove from heat
