Zucchini Muffins

Ingredients

• 3 eggs beaten
• 1 c oil
• 1 Tbsp vanilla
• 2 c shredded unpeeled zucchini about 2 medium size
• 1 12 c sugar
• 2 c unsifted all-purpose flour
• 1 Tbsp cinnamon
• 1 12 tsp soda
• 1 14 tsp salt
• 14 tsp baking powder
• 1 c chopped nuts

Directions

1. Combine eggs oil vanilla and zucchini Add and stir until moistened sugar flour cinnamon soda salt baking powder and chopped nuts Grease muffin tins Fill 23 full Bake in preheated 400 oven for 18 minutes
