Zucchini Muffins

Ingredients

• 3 eggs
• 1 c oil
• 1 c sugar
• 1 tsp vanilla
• 2 12 c grated zucchini
• 3 c flour
• 1 tsp cinnamon nutmeg and cloves
• 1 12 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt
• 1 c nuts optional

Directions

1. Beat eggs until foamy
2. Add oil sugar and vanilla
3. Stir in zucchini
4. Mix in dry ingredients
5. Pour into greased and floured cupcake tin
6. Bake at 325 for 12 hour
7. Makes 1 dozen
