Zucchini Muffins

Ingredients
- 3 eggs
- 1 c oil
- 1 c sugar
- 1 tsp vanilla
- 2 12 c grated zucchini
- 3 c flour
- 1 tsp cinnamon nutmeg and cloves
- 1 12 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 c nuts optional
Directions
- Beat eggs until foamy
- Add oil sugar and vanilla
- Stir in zucchini
- Mix in dry ingredients
- Pour into greased and floured cupcake tin
- Bake at 325 for 12 hour
- Makes 1 dozen
