Zucchini Nut Bread
Ingredients
- 2 c flour
- 2 tsp baking soda
- 1 tsp salt
- 14 tsp baking powder
- 3 12 tsp cinnamon
- 3 eggs
- 1 c vegetable oil
- 1 12 c sugar
- 2 c grated zucchini
- 2 tsp vanilla extract
- 1 tsp lemon extract
- 1 c raisins
- 1 c chopped nuts
- 12 c chopped dates
Directions
- Sift together dry ingredients except sugar
- Combine eggs vegetable oil sugar zucchini and extracts in a separate bowl and beat well
- Stir flour mixture into wet ingredients mix until smooth
- Add raisins nuts and chopped dates last and stir
- Pour into 9 x 5-inch loaf pans or muffin tins
- Bake at 350 for about 45 minutes for loaves and 20 minutes for muffins
