Zucchini Pancakes

Ingredients
- 2 medium zucchini
- 1 large egg
- 13 c Bisquick
- 14 tsp salt
- 2 Tbsp Parmesan cheese
- butter
- 12 c grated Cheddar or Monterey cheese
Directions
- Coarsely grate zucchini
- There should be 2 cups lightly packed down
- Beat egg
- Add zucchini Bisquick salt and cheese mix well
- In a large skillet fry tablespoons of mixture in a little butter until lightly browned
- Keep warm in oven while frying rest of batter
