Zucchini Pepper Relish
Ingredients
- 10 c zucchini
- 1 whole green pepper
- 5 Tbsp kosher salt
- 4 c onions
- 1 whole red pepper
- 2 12 c white vinegar
- 4 12 c sugar
- 1 tsp dry mustard
- 1 tsp celery salt
- 1 tsp nutmeg
- 1 tsp turmeric
- 1 tsp cornstarch
Directions
- Grind all vegetables and mix together with salt
- Let stand overnight
- Rinse with cold water and drain well
- Put into pot and add brine ingredients
- Bring to boil and simmer for 30 minutes
- Put in 6 to 8 small jars and seal
- Process in boiling water for 5 minutes
