Zucchini Pickle

Ingredients

  • 2 lb zucchini
  • 2 small onions
  • 14 c salt
  • 2 c white vinegar
  • 2 c sugar
  • 1 tsp celery seed
  • 1 tsp turmeric
  • 2 tsp mustard seed

Directions

  1. Wash zucchini and cut into thin slices
  2. Peel and quarter onions and cut in thin slices
  3. Cover vegetables with water and add salt
  4. Let stand 2 hours then drain thoroughly
  5. Bring remaining ingredients to a boil and pour over vegetables
  6. Let stand 2 hours then bring to a boil and boil 5 minutes
  7. Pack in hot sterilized jars and seal
  8. Yields 3 pints
