Zucchini Pie

Ingredients

• 4 c zucchini peeled and sliced
• 1 12 c sugar
• 13 tsp salt
• 1 12 tsp cinnamon
• 14 c flour
• 2 eggs
• 14 c lemon juice
• pastry for 1 2 crust pie unbaked

Directions

1. Slice zucchini thin
2. Mix first five ingredients
3. Beat eggs lightly with lemon juice
4. Mix with the first five ingredients Fill unbaked pie shell
5. Cover with top crust
6. Bake as apple pie
