Zucchini Pie

Ingredients

• 4 c thinly sliced zucchini
• 1 c chopped onion
• 13 c margarine
• 1 frozen pie shell defrosted
• 12 c chopped parsley
• 12 tsp salt
• 12 tsp pepper
• 14 tsp basil
• 14 tsp oregano
• 2 eggs
• 12 lb finely chopped Muenster cheese

Directions

1. Cook zucchini and onion with margarine for 10 minutes stirring
2. Stir in parsley salt and pepper basil and oregano Beat eggs with Muenster cheese
3. Add zucchini mixture with eggs Mix well and place in pie shell
4. Bake 18 to 20 minutes in 370 oven
5. Cool 5 to 10 minutes
