Zucchini Pineapple Bread

Ingredients

  • 3 eggs
  • 1 c oil
  • 2 c sugar
  • 2 tsp vanilla
  • 2 c grated zucchini
  • 1 can 8 12 oz crushed pineapple undrained
  • 3 c flour
  • 2 tsp baking soda
  • 14 tsp baking powder
  • 12 tsp cinnamon
  • 1 tsp salt
  • 34 tsp nutmeg
  • 12 c coconut optional

Directions

  1. Beat together eggs oil sugar and vanilla
  2. Stir in zucchini and pineapple
  3. Sift and stir in remaining ingredients
  4. Grease and flour two large loaf pans or five mini loaf pans
  5. Bake at 350 for 45 minutes to 1 hour
