Zucchini Pineapple Bread
Ingredients
- 3 eggs
- 1 c oil
- 2 c sugar
- 1 tsp salt
- 3 c flour
- 12 tsp baking powder
- 2 tsp baking soda
- 1 12 tsp cinnamon
- 12 tsp nutmeg
- 2 c grated zucchini unpeeled
- 1 8 oz can drained crushed pineapple
- 2 tsp vanilla
- 1 c raisins
- 1 c chopped nuts
Directions
- Beat eggs add oil sugar and vanilla
- Beat until thick and foamy
- Stir in zucchini and pineapple
- Combine dry ingredients add to mixture and mix well
- Bake in two well-greased and floured loaf pans at 350 for 1 hour
