Zucchini Relish

Ingredients
- 12 c ground zucchini
- 4 c ground onion
- 5 Tbsp salt
- 2 12 c vinegar
- 6 c sugar
- 1 Tbsp dry mustard
- 34 tsp nutmeg
- 34 tsp turmeric
- 34 tsp cornstarch
- 1 12 tsp celery seed
- 12 tsp pepper
Directions
- Mix zucchini onion and salt and let set overnight
- Rinse 2 or 3 times in cold water and let drain in colander
- Mix in large pan sugar spices vinegar and cornstarch
- Heat until mixture thickens
- Add zucchini and onions
- Cook 30 minutes and put in jars and seal
