Zucchini RelishCanning

Ingredients

  • 2 c chopped zucchini 3 medium
  • 1 c chopped onion 1 medium
  • 12 c chopped sweet pepper 1 small
  • 12 c chopped sweet red pepper 1 small
  • 2 Tbsp salt
  • 1 34 c sugar
  • 1 c cider vinegar
  • 2 tsp celery seed
  • 1 tsp mustard seed

Directions

  1. Combine zucchini onion green and red peppers
  2. Sprinkle with salt and cover with cold water
  3. Let stand 2 hours
  4. Drain vegetables press out liquid
  5. Combine remaining ingredients bring to a boil
  6. Add vegetables simmer 10 minutes
  7. Pour hot into hot jars leaving 14 inch headspace
  8. Adjust caps
  9. Process 10 minutes in boiling water bath
  10. Makes 4 12 pints
