Zucchini Stew

Ingredients

• 3 to 4 10-inch zucchini
• 1 onion sliced
• 2 garlic cloves minced
• olive oil
• 1 pkg Jimmy Dean sausage thawed
• 1 large can tomatoes
• 2 basil leaves
• salt and pepper to taste

Directions

1. Thaw sausage meat the night before
2. Brown in frying pan and drain any excess fat
3. Set meat aside
4. Peel zucchini and slice into 14-inch thick rounds
5. Peel and slice onions and garlic
