Zucchini Stick Salad

Ingredients

  • 1 12 lb zucchini about 6 medium
  • 2 medium bell peppers red or green
  • 2 Tbsp olive oil
  • 12 c ripe olives halved
  • 12 c green onions sliced
  • 12 tsp pepper
  • 1 tsp garlic salt
  • 3 Tbsp white wine vinegar
  • 3 Tbsp capers optional
  • 14 c olive oil
  • 12 tsp sugar
  • 12 tsp oregano

Directions

  1. Slice zucchini and peppers into thin strips
  2. Heat oil in frying pan stir in zucchini and peppers to coat evenly
  3. Cover and cook about 10 minutes stirring occasionally until tender-crisp when pierced
  4. Do not overcook
  5. Remove from heat and stir in olives and green onions 1 teaspoon garlic salt and pepper
  6. Turn into bowl
