Zucchini White Cake

Ingredients

• 2 c flour
• 2 tsp soda
• 12 tsp baking powder
• 1 tsp salt
• 1 tsp cinnamon
• 3 eggs
• 2 c sugar
• 1 c oil
• 1 tsp vanilla
• 2 c grated zucchini
• 1 c nuts or 1 c coconut
• 6 oz cream cheese softened
• 1 Tbsp milk
• 1 lb confectioners sugar
• 12 tsp vanilla

Directions

1. Sift together the dry ingredients
2. Set aside
3. Cream together the eggs sugar oil vanilla and zucchini
4. Add the dry ingredients and mix well
5. Stir in nuts or coconut
6. Bake at 350 for 1 hour
7. Cool
